How to use it

 

Mortadella Bologna PGI, known abroad simply as “Bologna”, is one of the finest products of Italian gastronomy. Not everyone knows that it started out as a luxury food, reserved for the wealthy and the elite, before gradually becoming one of the most common everyday foods. This flavourful cold cut is loved by everyone, young and old, and has held PGI status since 1998, a symbol of its undisputed quality. Used in countless recipes, it lends itself to many uses: diced as an aperitif snack, sliced with piadina, tigelle and crescentine, starring in the well-known mortadella mousse, not to mention that it’s an essential ingredient in the filling of the famous Bolognese tortellini.
